What a fresh way to start your day! You can really eat this any time of day honestly. Or even as a dessert after dinner. It truly makes you feel so good. There are lots of superfoods packed into this powerful bowl like spinach (feel free to use kale or greens of your choice), berries, banana, acai, coconut, and my homemade granola.

What I like to use
I get these both at Trader Joe’s. The Acai comes in small frozen packets like this which make it so easy to blend into a smoothie. I use about a half of this packet per Acai bowl.
Time to blend
Throw the bananas, berries, Acai, and coconut water into a blender and blend away!
Get your toppings ready
In this bowl I used shredded coconut, my homemade granola, additional frozen berries, and a fresh strawberry on top. Serve immediately and feel amazing!

Vegan Acai Bowl
- 1 frozen banana
- 1/2 packet frozen Acai Trader Joe's brand
- 1 cup frozen berries
- 1 cup coconut water
- 1 cup spinach or greens of your choice
- Combine all ingredients in a blender and blend until smooth
- Top with homemade granola, unsweetened shredded coconut, and additional frozen berries
- Serve immediately and enjoy!
